Notes
- derived from hard outer layers of wheat
- particularly rich in dietary fiber
- rich in essential fatty acids
- contains significant quantities of starch, protein, vitamins, dietary minerals & phytic acid which prevents nutrient absorption
- high oil content of bran makes it subject to rancidification
- bran may be heat-treated to increase its longevity
