• particularly rich in dietary fiber
• rich in essential fatty acids
• contains significant quantities of starch, protein, vitamins, dietary minerals & phytic acid which prevents nutrient absorption
• high oil content of bran makes it subject to rancidification
• bran may be heat-treated to increase its longevity
