Clinical significance
- byproduct of coffee roasting & other high-temperature food processing
- a carcinogen
Notes
- Los Angeles Superior Court Judge Elihu Berle ruled that Starbucks & other coffee companies in California should have to post warnings that their coffee contains acylamide, a byproduct of coffee roasting that has been linked to cancer[2]
- no evidence is presented that the amounts of residual acrylamide in coffee is associated with increse risk for any type of cancer
