Introduction
Product of addition of 2 moles of alcohol to 1 mole of aldehyde. In the case of a carbohydrate, one of the alcohol groups is provided by a hydroxyl group on the carbohydrate itself to form a 5 or six-membered ring (for example, see glucose moiety of sucrose).
