gelatin (Jello)

Introduction
A product of boiling collagen in water. Gelatin dissolves in hot water, but when allowed to cool, forms a substance commonly known as 'Jello'.
Uses
- hemostat
- plasma substitute
- food substance, collagen & gelatin are poor-quality protein since they do not contain all the essential amino acids
