• hydrolysis of N-acylated or N-acetylated amino acids (except L-aspartate) {acylated L-aspartate cleaved by aminoacylase-2}

N-acyl-L-amino acid + H2O <--> a carboxylate + an L-amino acid

Cofactor: binds 2 Zn+2 per subunit
