Function

• deglycating enzyme
• phosphorylates the 3rd carbon of ketosamines (sugar moiety), psicosamines & ribulosamines, but not fructosamines, on third carbon of the sugar moiety
• protein-bound psicosamine 3-phosphates & ribulosamine 3-phosphates areunstable & decompose under physiological conditions.
• may play a role in freeing proteins from ribulosamines or psicosamines, thus phosphorylation leads to deglycation
